Ingredients
  • Gelatin to set 2 pints of liquid
  • 300g coconut milk
  • Pandan extract
  • Green food colouring
  • 100-200g sugar
  • Water
Coconut jelly
  • Add water to coconut milk to make a full pint.
  • Add sugar to taste
  • Strain to remove any lumps
  • Mix with half of the gelatin according to packet instructions
Pandan jelly
  • Mix pandan extract with enough water to make a full pint, add colouring.
  • Add sugar to taste
  • Mix with other half of the gelatin according to packet instructions.

Slowly spoon or pour a third of the mixture into a dish, refridgerate until just set (20 mins). Repeat, alternating layers. Allow to set completely and cut into blocks with a wet knife.
